¡OYE, MIJA! Let's Talk About Esteban Castillo y Chicano Eats "Mi existir es resistir." — ¡Y con ESA frase, Esteban nos dice todo, comadre!

¡OYE! ¡De Santa Ana para el Mundo! 🌮

¡Ay, Dios mío, déjame decirte algo! Let's talk about Esteban Castillo—the creative genius behind Chicano Eats. The one who's changing how we see Mexican food, mija. ¡El que está haciendo HISTORIA en la cocina!

He grew up in Santa Ana, California—where more than 75% of the population is Latino . Mexican food was the foundation of his childhood . His grandparents on his mom's side—they're his BIGGEST inspiration! His grandpa mined sea salt on the coast of Colima, ran a taco cart, raised cows. And his grandma? She runs a makeshift restaurant in their backyard, whipping up tacos de papa, birria, and pozole for anyone who's hungry . ¡Así se hace, comadre!

But here's the thing—when Esteban moved away for college, todo cambió .

¿De DÓNDE Sale Chicano Eats? ¡Ay, esta historia es BUENÍSIMA! 🤔

¡OYE! Let me tell you this because it's my FAVORITE.

Esteban moved up north to Humboldt State University—a 13-hour drive from home, stranded in the middle of nowhere . He could count the number of Mexican restaurants on one hand. ¡Imagínate, mija! So he started calling his mom for recipes.

But you know how Mexican moms are, right? She would say: "Add a little bit of this or a little bit of that" . ¡Qué confusión, comadre! So he got into the kitchen and started cooking from memory—watching his grandparents, sitting there while they made tacos . And then something MAGICAL happened. He realized he was on autopilot, making chile rellenos the same way his mom and grandma did .

In college, he studied Public Relations and Graphic Design. He helped start El Leñador—a bilingual Latinx newspaper—and had a food column called "Mi Cocina, Mi Sazón" . ¡Ese fue el principio!

But the real kicker? He saw a white blogger make pozole with a JAR OF SWEET SALSA . And he thought: "¡Ay, Dios mío! These publications aren't looking to us for our expertise." So in fall 2016, a few weeks before the election, he launched Chicano Eats .

¡El ESTILO de Chicano Eats es ÚNICO! 🎨

¡AY, MIJA! When you look at his blog, you KNOW it's him. Bright colors. Minimalist aesthetic. Bold presentation . He wanted to challenge how people see Mexican food—not just rustic clay pots, but something MODERN and BEAUTIFUL .

He was inspired by artists like Josef Albers and his "Homage to the Square" . His colors? Red, yellow, blue—and orange because he thinks it's "such a sexy color" . ¡Y tiene razón!

The aesthetic is a nod to his identity. He says: "I wanted to give Mexican food this minimalist, very colorful treatment, because that's what I always gravitated to when I was in school" .

Los LIBROS: Chicano Eats y Chicano Bakes 📚

¡OYE! Let me run this down for you real quick because his catalog is STACKED:

In 2020, he released Chicano Eats: Recipes from My Mexican-American Kitchen . 85 traditional and fusion recipes—mac and queso fundido, birria with guajillo chile broth, champurrado chocolate birthday cake . It won the Saveur Best New Voice People's Choice Award .

But here's what surprised him—everyone gravitated to the DESSERTS chapter . A dulce de leche chocoflan went VIRAL . And he thought: "Why can't I have a slice of that pie?" So he pitched another book.

His publisher said no. They didn't think there was an audience for Mexican sweets . But Esteban PERSISTED. And in 2022, he released Chicano Bakes—80 recipes for pan dulce, tamales, and desserts . ¡Y qué pasó! It made the New York Times Best Cookbooks of the Year list . ¡SOLD OUT everywhere!

The book has a DISCO FLAIR—bright colors, glitter, lights . Why disco? Because it's a way to "insert a little bit of queerness" into the cookbook . He says: "When I think about the disco era, I think about indulgence. And for me, that's what these desserts are: a way for me to indulge and just feel some euphoria" .

La POLÍTICA y la Identidad 🏳️🌈

¡OYE, MIJA! Esteban's work is POLITICAL. He launched the blog right before the 2016 election . He says: "My existence is my resistance. Food is political, and I'm reclaiming that narrative" .

Growing up, he was caught between two worlds. In Mexico, his cousins teased him for speaking English—he wasn't "Mexican enough." But in the U.S., he spoke Spanish and wasn't "American enough" . He says: "We just don't feel like we fit in anywhere" .

In 2020, he came out to his dad . He had already told his mom and siblings, but this was the big one. He says: "After having that conversation, I just felt liberated. It was this huge weight off my shoulders" .

He lives in Fresno with his husband, Billy Green, a fellow food blogger and recipe developer . Together, they're making magic in the kitchen—and in life.

¿Por QUÉ Esteban Castillo es un ÍCONO? ¡Déjame Decirte!

1. ¡Representa a los que NO encajan! — He speaks for the first-generation kids, the queer kids, the brown kids who don't feel like they belong anywhere.

2. ¡Su estilo es REVOLUCIONARIO! — He made Mexican food look MODERN and BEAUTIFUL, not just rustic street food.

3. ¡PERSISTIÓ contra todo! — His publisher said no to Chicano Bakes, and he fought for it. ¡Y ganó!

4. ¡Es auténtico! — He says: "My mom's approach to cooking is the same way I started approaching food" .
